Flame Snapper is a tropical snapper of the Lutjanidae family (Tropical Snappers and sea perches).
Flame Snapper are a great eating fish with mild-medium flavour, low oiliness and moist, great sweetness with flaky texture and few bones, which are easily removed. Typically a larger Snapper, the Flame Snapper produces a very versatile fillet. The thickness allows perfect portioning and a remarkable plate presentation.
At 98Fish our staff are torn as to whether the Flame Snapper is better than Goldband Snapper. They are both a beautiful eating fish, with similar characteristics.
They can grow up to 1.2m in length and inhabit rocky depths. Flame Snapper have a long slender body with deep pink to red upper sides fading to silver on the lower sides and belly. The head is small with large eyes, a short snout and the lower jaw protrudes. The fins are pink to red.
